1. Sweet Potato and chicken curry

One of our students’ favourites, this recipe combines the classic chicken curry with sweet potato.

Ingredients

  • 500g sweet potato
  • 4 skinless chicken thigh fillets
  • 1 large red onion
  • 2 tbsp rogan josh curry paste
  • 2 large tomatoes 125g spinach

2. Ratatouille pasta salad with rocket

Ingredients

  • 200g whole-wheat penne
  • 2 red onions
  • 2 courgettes
  • 2 aubergines
  • 12 Kalamata olives, sliced
  • 4 tsp balsamic vinegar
  • 4 handfuls rocket

Serves 4

3. Chicken Fajitas

  • 1/2 c. plus 1 tbsp. extra-virgin olive oil
  • 1/4 c. lime juice, from about 3 limes (or use lime juice)
  • 2 tsp. cumin
  • 1/2 tsp. crushed red pepper flakes
  • 1 lb. boneless skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 3 bell peppers
  • 1 large onion
  • 12 tortillas ( each pack normally has 8 tortillas)

4. Wholewheat spaghetti with chorizo and rosemary pangritata

  • sourdough bread 200g, crusts removed
  • olive oil 8 tbsp
  • chorizo 100g chunk, cut into tiny dice
  • rosemary chopped to make 4 tsp
  • wholewheat spaghetti 300g
  • garlic 4 cloves, finely chopped
  • dried chilli flakes 1 tsp
  • parmesan 60g, finely grate

5. Pasta with kale, mustard and sausage

Ingredients

  • Kale 200g
  • Rigatoni 350 g
  • Olive oil
  • Herby sausages x  8
  • Garlic 4 cloves
  • Dijon mustard 2 tbsp
  • Chicken stock 200ml
  • Double cream 150ml
  • Parmesan 60g, finely grated

Serves 4

6. Fried rice

Ingredients

  • 1 cup uncooked jasmine rice, (180g)
  • 2 cups water, (480ml)
  • 2 tablespoons vegetable oil, (30ml) divided
  • 1/4 cup minced white onion, (30g)
  • 1 tablespoon minced garlic, (10g)
  • 1/2 cup diced carrots, (70g) 1/4-inch dice
  • 1 teaspoon sesame oil , (15ml)
  • 2 large eggs, whisked
  • 1/2 cup peas, (65g) frozen, defrosted
  • 1 tablespoon soy sauce , (15ml)
  • kosher salt, as needed for seasoning
  • white pepper, as needed for seasoning
  • 2 tablespoon thinly sliced green onions, (6g)
